Does An Auto Repair Shop Know What The Insurance Company Is Paying To Get Fixed?

I received a check from my insurance company made out to me and the repair shop. The estimate was for $1700. I found a remanufactured part, instead of new, at the shop for $500 cheaper, so the total would be $1200. Will they cut me a check for the difference? Do they know what the insurance is paying to get fixed? Could I have something else fixed on my car with the difference? Please be specific. Thanks.
